Prog and punk clashed and melded on this edition of The Hidden Places, with naught but a few segues to tie things together. I hope you enjoyed it; again, it was a fun one to put together.

Today’s show was a foray into the wilds of my iPod, a bit of an adventure for the adventurous listener. It was great fun to put this one together, and I hope that you had as much fun listening to it as I had making it.

Today’s show focused on a simple concept: a mix of some of my favorite North Carolinian music culled from the years I served as WKNC’s Local Music Director. Pop ruled the day, but there were a few dips into the slightly avant-garde for good measure. If you enjoyed it, the next few shows will dip further into this territory (the… hidden… territory?), and who knows where that might lead…

Our first cooking-related episode! On this edition, Rachael and I decided to cook up her family’s delicious riff on traditional Greek souvlaki, interspersed with inappropriate jokes and snarky jabs on Julia Child, Rachael Ray, and that paragon of Southern cuisine herself, Paula Deen. For those listening, here are the recipes we used:
Tzatziki Sauce:
1 1/2 cups sour cream
1 cucumber, de-seeded
1 cup fresh cilantro
2 cloves garlic, whole
1/2 lime, juiced
1 tsp coriander
zest of one lime
kosher salt (to taste)
Cut cucumber into small pieces and add to food processor alongside garlic cloves and cilantro. Process until mixture reduces to a paste-like consistency, then empty mixture into a strainer and strain out excess water. Add mixture to sour cream, stir, then add lime zest, coriander, and salt, stirring yet again. Add lime juice and stir once more, then, upon tasting, add any further salt required.
Serves 3-4
Souvlaki:
1-2 pork tenderloins, chopped into cubes/small pieces
1 tbsp kosher salt
2 tsp pepper
2 tsp garlic powder
1 tbsp lime zest
1 cup cilantro
Olive oil
Add olive oil to a frying pan and apply high heat. When oil is warm, add pork and saute until it begins to change color. Upon color change, add salt, pepper, and garlic powder, and continue to cook until pork browns. Drain pan, add more olive oil (if needed), and add lime zest. Saute for a minute then reduce heat to medium and add cilantro, stirring frequently.
Serves 3-4
Buttered Pita Bread
6 loaves white pita bread
1/2 stick butter
Preheat oven to 350 degrees F. Add a pat of butter to a pan over high heat and add 1 loaf pita bread. Brown both sides gently. Repeat process for all loaves and keep warm until serving.
Serves 3-4

The second episode of The Hidden Places, held, alternatively, at 35 Chinese Restaurant in Cary, NC and the Red Hat headquarters in Raleigh, NC, featured Ryan Sweeney from chooselocalmusic.com, a new local music initiative designed to inspire those in North Carolina to discover the artists playing in their backyard. The mix was slightly more eclectic this time around, featuring tracks from a wide variety of NC artists, and the food doubly so (just ask Rachael about the spicy beef tendon appetizer). The next episode will feature the debut of the latest EP from Schooner (www.schoonermusic.com), so tune in next week for more excellent local music!
